Kitchenaid Pasta Recipes

I just love pasta. My friends and family like to joke that I think it’s a food group. Well, isn’t it? And, of course, fresh is much better than the regular kind. It can seem a bit daunting, but with the pasta attachment for your mixer and a few basic Kitchenaid pasta recipes, it’s pretty simple.

Once you’ve tried it, you may never want to eat the dried stuff again. A standard recipe only requires four ingredients, and they’re ingredients you probably already have in your kitchen: flour, eggs, oil, and salt.

My great-grandmother used to make noodles by hand, rolling them out, cutting them, and waiting for them to dry. Lots of hard work, and it took forever. With the Kitchenaid pasta attachment, you don’t have to hurt yourself rolling out all that dough. Great-grandma would have loved it.

Easy Kitchenaid Pasta Recipes

You’ll need both the standard (paddle-shaped) beater and the dough hook to make these (they both come with your mixer).

Semolina  – Use this easy recipe for linguini, fettucini, or ravioli dough.
Fresh Pasta Dough  – Make your own pasta with just four ingredients: flour, oil, eggs, and salt.  There are also directions for variations such as spinach pasta, tomato pasta, and squid ink pasta.
Spaghetti Recipe  – Good for about 1.5 pounds of spaghetti. There’s an excellent tip here:  if you don’t have a pasta rack to dry your noodles, use plastic hangers instead (just make sure to flour them first so the noodles don’t stick).
Homemade Noodles – This recipe is taken from Kitchenaid, but it’s worth visiting as the page has step-by-step photos, as well as extra tips  for using the pasta attachment.
Thousand Layer Lasagne  – My cousin came back from school in Italy with a recipe very much like this one. Delicious!!

Don’t Overcook Your Pasta

Homemade, fresh pasta cooks much faster than the dried version. It should be ready in a minute or two. Don’t overdo it!

When the executives at Hobart were testing the consumer versions of their commercial mixers, one executive’s wife remarked, “This is the best kitchen aid I’ve ever had.” And that’s how the mixer got its name.

Bread pans for pullman loaves, french bread, and long sandwich size breads.

You can make simple bread recipes in a standard loaf pan, but if you’re going to branch out into more complicated recipes, you’ll need a specialized pan to make it.

 

French (or Italian) bread won’t come out right unless you use the right pan. The holes let moisture escape, and help you get bread that’s crusty on the outside and soft on the inside.

Most bread pans turn out a loaf that’s quite a bit smaller than the packaged loaf you’d get in a store.  This one is long enough to make a full-size sandwich size loaf. It’s non-stick and the sides are straight (rather than angled like most pans), so the bread will fit better in a sandwich bag.

The lid ensures you get a nice, square loaf. The pan is nonstick, and has a special coating that makes cleanup easy. Just wash it by hand (do not put it in the dishwasher, as that will remove the coating). Made in USA.

  • Cheesy Italian bread – Romano cheese is baked right into the bread.
  • Italian bread – It doesn’t specify this in the recipe, but mix this bread on speed 2.
  • Foccacia bread  – Tyler Florence’s focaccia recipe.
  • Ciabetta bread recipe – Just perfect for sandwiches. You may find yourself finishing the first loaf before the second one comes out of the oven.

If you just got your mixer and aren’t sure how to use it (or the attachments), here are tips and instructions. This includes assembly, recipes, and videos so you can see exactly how the strainer, grinder, and slicer work.

 

 




Frittata Recipe for One Person

The first time I made this frittata recipe it was for a crowd (rather than one serving) on a boat, which was rocking. It took quite some time to make and they devoured it in minutes! I’ve scaled it back considerably, made it a bit faster, and of course, it’s now a frittata recipe for one person instead of six. If you’re not sure what a frittata is, think  of an omelette crossed with a quiche. The full list of ingredients changes, but it’s essentially eggs, sliced potatoes, and veggies.

The other great thing about frittatas is that they’re flexible. The original recipe (from one of the 60 Minute Gourmet cookbooks) called for ham, zucchini, leeks, peppers, and mushrooms. A great combination, but I didn’t have all those ingredients when I made the version I’ve posted here. So, I used broccoli, mushrooms, and onions instead.

It does require a bit of slicing and chopping, but you can cheat, and use some frozen, pre-cut veggies, which is what I did here. I’m calling it lunch, but you could make it for a weekend brunch or for dinner too.




 

Substitutions and Variations for Your Frittata for One

  • make it with spinach, feta, scallions, and dill (like spanakopitas)
  • or crumble some cooked sausage and parmesan cheese
  • add artichokes (the marinated kind) and red peppers
  • add a mild cheese
  • cook some bacon, crumble it up, and add that to the vegetable/potato mixture

Small Batch Brownies with Cocoa Powder

There’s nothing like a fresh batch of warm, slightly gooey brownies to make a cold day seem more cheerful. The trouble is that most recipes make dozens of brownies, which is way too much! This recipe is for a small batch of brownies, made with cocoa powder. So, you don’t even have to go out and buy baking chocolate or special ingredients.

The other great thing about this recipe is that you only need one bowl to make it. Just put everything in the bowl, mix it all up, pour it in the dish, and bake.

I don’t know where the original recipe came from, but I did cut down the sugar a bit and change the sugar it used. As written, it called for all brown sugar. It also said to use an entire cup of sugar. I thought that was a bit much for a small portion, and I also thought that all brown sugar would be too sweet. I used half granulated sugar and half brown sugar, and reduced the total to 2/3 C (1/3 C each kind of sugar).

I still think that’s a bit sweet, so I may reduce it to 1/4C of each the next time. However, since I know I tend to like less sugar than many other people, I’ll leave the larger amount here in the recipe.





Tools and Ingredients for Small Batch Brownies with Cocoa Powder

First, you’ll need a small baking pan. Since this is a small-batch recipe, using a large one will likely cause the brownies to get overcooked and burn. It’s not just for brownies though. Use it for a small lasagna, for quiche, or to bake a small coffee cake.

The next important thing is the cocoa. Use a high quality brand, such as Cadbury or Droste if you can.This is what I used to make my brownies. It’s dark, rich, and delicious (makes great hot cocoa too). It is a bit pricey, but it lasts forever so long as you keep it in a cool, dark place, away from anything damp.

For this, or any other recipe that calls for it, make sure to use genuine vanilla. Not “vanilla flavored,” but the real thing. The artificial stuff is made from wood! It’s a large bottle, and since you don’t use much vanilla in most recipes, it should last a long time.

Savory Mac and Cheese Recipe with Three Cheeses

There are probably hundreds, if not thousands, of mac and cheese recipes out there: three cheese, four cheese, and on and on. This savory mac and cheese recipe is a bit different. First, it’s both savory and cheesy, second it’s sized for just one person. No leftovers.

I got the idea for this recipe from a friend who made it with sun dried tomatoes. I tried it that way, but wasn’t mad about the combination.  However, the idea to add bay leaf and garlic is inspired.  I know it sounds odd, but the garlic becomes mellow once you cook it, and the bay leaf complements the cheese.




I’ve used three cheeses: cheddar, mozzarella, and manchego. My friend used cheddar and parmesan. You can follow my version, or his, or make up your own. Provolone would work too.  I even recently had mac and cheese that had muenster in it, which worked surprisingly well.

One thing though, he used low fat milk, which I would never do.  You can, if you want to.

Savory Mac and Cheese Recipe Substitutions and Variations

  • as suggested above, mix and match the cheese you use
  • add the sun dried tomatoes when you mix the cheese and pasta together (just because I didn’t care for it, doesn’t mean it’s a bad idea)
  • cook some bacon and crumble that on top
  • include some caramelized onions
  • top with prosciutto

Cranberry Chipotle Turkey Burrito

Thanksgiving is great, but finding new and different ways to use up the leftovers can be a bit of a challenge. However, it’s also an opportunity to be creative. I had an idea for cranberry chipotle turkey burritos and went looking for cranberry chipotle salsa or even some cranberry relish in the supermarket.  The store had both, but I eventually decided I didn’t want to buy a whole jar (and end up with more leftovers to use up).  So I created my own instead.

I took some of the leftover turkey, a few craisins (dried sweetened cranberries), and added chipotle salsa which I already had (and could use for other recipes like chili or meatloaf). I combined them together to make cranberry chipotle turkey burritos.

If you already have cranberry relish or cranberry salsa from your own dinner that would work beautifully too.

It’s pretty simple. Just warm up the turkey, heat the tortilla in some oil, add the rest of the ingredients, and roll it up into a burrito.

A few weeks ago, those tortillas were “crepes“, but this time I decided to use them as intended on the package!

Much as I love my zester/microplane, there are some jobs that require a different tool. A box grater can slice or shred food better than a zester can. Use this to shred or slice cheese, carrots, onions, and potatoes or to coarsely grate citrus peels (use the microplane for finer results).

This particular grater comes with its own marked storage container, so you can measure while you’re grating and just make exactly the amount you need.

I don’t like the old-style non-stick pans, but I confess I am enjoying using my ceramic pan. I can make eggs, burritos, frittatas, and many other things without worrying about it sticking and it cleans up easily. So far, the coating has held up beautifully. I don’t have this exact pan, but if I had seen the red I would have gotten that one in a New York minute. Do keep the heat a bit lower than you would with a stainless steel pan, and be careful if you have a glass top stove.

Spicy Beef Noodle Soup for One

It’s creeping crud season, and while I’m not quite sick, I’m definitely not feeling quite well either. I was browsing through Pinterest and spotted a spicy beef noodle soup recipe. I was about to save it when I realized I already had one! So I made that instead.

The beauty of this is that it’s really easy, and quick, as well as being spicy (good for fighting germs), hot (the steam is good for fighting congestion) and comforting on a cold day.  I sort of got this recipe from my online friend Terry. She had posted a “recipe” (no amounts or detailed directions, just the ingredients) for a spicy beef noodle soup that sounded awfully good.

She used red pepper which I didn’t have, as well as a specialty Korean chili sauce (which I also didn’t have). However, cooking is part following what someone else is done, part inspiration, and part improvisation, so I went with improvisation.

I did have cabbage, and I also had leftover steak, sriracha, and chili garlic sauce. I figured those would work just fine for my beef noodle soup.




If you don’t have turkey stock, you could use beef or even chicken if you prefer (see improvisation!).

Either way, once you have the stock, the rest of the soup is really easy to make and only needs a few ingredients.

Start the noodles first, then while they’re cooking, heat the stock in a separate pot and add the other ingredients. Or, you could throw everything (except the steak!) in one pot. If you do, the noodles will absorb a lot of the liquid, so you’ll need more.

Since I had the leftover steak,  I didn’t even have to cook that. If you don’t, cook that while the noodles are cooking, and then add it to the soup at the last minute.

Another thing about this spicy beef noodle soup is that with all that garlicky, spicy goodness it will kill any germs that may be plaguing you!

Spicy Beef Noodle Soup Substitutions and Variations

  • Use roasted gochujang (which is what Terry used)
  • Swap the steak for cooked turkey (especially if you still have turkey to use up), add that at the end, just for a minute to heat up
  • Add sliced red peppers
  • Put in some mushrooms; crimini or other stronger flavored varieties would work best

Tools and Ingredients for Spicy Beef Garlic Soup

I love this stuff. It’s got a stronger kick, and less sugar, than the sriracha, plus the extra heat (and spiciness) from garlic.  It’s great in meatloaf, on eggs, in soup, or in a sauce. Think garlicky salsa.

 

If you prefer a hint of sweetness, you might like this instead of the chili garlic sauce (or use them both).  Squeeze it over eggs, into soup, on enchiladas, or burritos.  It’s also good for stir-fry. Think of it as ketchup with a kick.

Easy Pear Crepe Dessert Recipe for One Person

This easy pear crepe dessert recipe is ready in just a few minutes, without a lot of fuss and bother.  It’s nearly winter, the temperatures are dropping, and it’s the perfect time for a holiday treat.

The pears were still fresh at the greenmarket, so I pounced.

You’re probably wondering how the words “crepe” and easy go together. After all, crepes are a bit of a pain to make from scratch. It takes a bit of work to get going (even if you’re accustomed to it) and it’s not really practical to make just one.

The secret is that I didn’t use a standard crepe recipe, or even a crepe recipe at all.  I used a very thin, whole wheat tortilla instead.  That meant I could cook it quickly, and didn’t have to worry about extra crepes lying around.

The rest of the tortillas will be used for another day’s dessert, for wraps, and burritos. And, since the tortilla is sturdier than a real crepe, it holds together better, and I can fill it with more pear! I haven’t tried it yet, but it might also work well with bananas.

  • try pear brandy instead of standard brandy
  • serve topped with a scoop of vanilla ice cream
  • add a pinch of ginger to the cinnamon/pear/sugar mixture
  • drizzle the crepe with chocolate syrup

Lentil Bean Sausage Soup

I’ve mind melded two lentil soup recipes for this and added a few variations to make lentil bean sausage soup. I was going to make bean and sausage soup but looked in the cupboard and found I was woefully short on beans.  There just weren’t enough to make anything with.  But, I did have more lentils.  And, a friend was talking about the bean, sausage, and potato soup she was making.

That gave me an idea.  Bean, lentil, potato, and sausage, plus a bit of manchego rind for some savor.

Manchego, parmesan, and romano cheese rinds are great, by the way, for soup or for grating cheese when there’s plenty left on the rind, but not enough to serve.

The nice thing about lentils is that unlike beans, you don’t have to soak them first to use them.

If you only have lentils, skip the beans entirely.  If you only have beans, use my quick soak method to speed up the process.

Tea strainers are great for tea, but they also have a second use for making soup and other recipes.  Many recipes call for cheesecloth (which I’ve never seen in a store, and seems wasteful anyway).  Instead, I use the tea ball for bay leaves, peppercorns, cloves, and herb mixtures that have to be added (and then removed) from soup or other recipes. Because, who wants to bite down into a peppercorn?!

Actually, I’ve never had a bad recipe from this one. Plus there are suggestions and variations for many of the recipes, which I like.

Easy Chocolate Mousse

I started making this easy chocolate mousse recipe when I was 14 or so. It’s now (cough, ahem, mumble) years later, and I’m still doing it.
The original recipe came from Seventeen magazine. It was so easy that I made it for my friends (even hosted a party) and served it to my parents.

This is still remembered today as the infamous, “Jodi, you make dinner tonight episode:” all my favorites — fettucine alfredo and chocolate mousse. 

I’ve now learned to make much more complicated desserts (chocolate and otherwise), but this easy recipe is still a big favorite.

The recipe is so easy, a kid can make it. You don’t have to separate eggs, or follow lots of complicated instructions. There are only 5 ingredients: a chocolate bar, heavy cream, water, vanilla, and an egg.

If you can boil water, you can make this chocolate mousse. The only tools you need are a blender, a measuring cup, a measuring spoon, and a spatula.

Easy Chocolate Mousse Substitutions and Variations

  • Use a dark chocolate bar (like 70%) for an extra chocolate boost.
  • Freeze the mousse. It comes out like chocolate fudge ice cream.
  • Add raspberries or strawberries on top. If you freeze those too, they get even sweeter.
  • Garnish with shaved chocolate or chocolate sprinkles.
  • Serve layered in parfait glasses with whipped cream in-between.
  • Make it with coffee instead of water.
  • A splash of Kahlua or Amaretto might be fun too!
