Salmon with Greek Yogurt Dill Sauce

Salmon with Greek yogurt dill sauce is a great combination.  The piquancy of the Greek yogurt complements the rich flavor of the fish beautifully. A pinch of mustard gives it a bit of a bite, without overwhelming the rest of the dish.

The other great thing about this dinner is that it’s quick and easy to make.  Just mix a few simple ingredients for the sauce (which uses ingredients you probably already have, so no need for a special trip to the grocery store), season the salmon, and put the fish in the oven while the sauce flavors combine.

I’ve written the recipe for a toaster oven (since I don’t want to heat up the whole apartment), but you can make this in a standard oven too. Or, if you’re really pressed for time (or very hungry), you can cook it in your microwave.  If you do, once the sauce is made and the fish is seasoned, you can have dinner in 6 minutes.

One of the great things about this salmon with Greek yogurt dill sauce is that it’s a quick meal that looks (and tastes) like you cooked for hours. And, it’s easy to scale this up and serve it when you have company.

If you have the time, do let the sauce sit for a while before you cook everything else.  It really does improve the flavor.

I served the salmon with some jasmine rice (which is my new favorite rice), the rest of the cucumber I used for the sauce (fresh from the farmer’s market), and some beautiful, ripe Jersey tomatoes.

It’s a great summer meal because it’s light, doesn’t require a lot of fussing, and it’s ready in a few minutes. And, since you’re cooking the dish in foil, there’s one less thing to wash when you’re finished (which is always a bonus, as far as I’m concerned).

Easy Lentils and Rice Recipe

I had a partial bag of lentils leftover from making lamb and lentil soup some months ago, and decided they’d make a good fairly last minute dinner. Unlike beans, lentils don’t have to be soaked, so you can make them quickly.

Lentils and rice go together just as well as beans and rice, plus when you put them together you’ve got a complete protein. My mom always stressed this when I was a kid; it makes me laugh now. It’s a fairly quick, tasty dinner and it’s also pretty budget-friendly.

I looked at several other lentils and rice recipes and didn’t like any of them. Some were too bland and simplistic, while others involved way too much work and some hard-to-find ingredients.

I try to keep my recipes tasty, but not complicated (and with ingredients that are readily available).  So, I did a bit of fudging, combining, and tweaking to get the results I wanted.

 

This lentils and rice recipe is fairly easy to prepare, and features a surprise ingredient you may not expect. It is, admittedly, not going to win awards for looks, but it did taste good!

  • If you have the time, start by caramelizing the onions first; you’ll get a deeper, richer flavor
  • Make it Lebanese with the caramelized onions, a fried egg, and cumin (full recipe)
  • Or, go to Ethiopia with some cardamom, tomatoes, cumin, and red lentils (instead of brown)

Pasta with Broccoli, Mushrooms, and Chicken Sausage

This pasta with broccoli, mushrooms, and chicken sausage recipe is based on a recipe invented by Kimberly Chapman (from Eat the Evidence; she makes astonishing desserts and “Ace of Cakes” cakes too).

She had this wonderful English, locally raised bacon and fresh asparagus and decided to make pasta with it (her recipe is here).

It looked so good I wanted to try it.  But I didn’t have bacon (or asparagus).   I could have gone out and bought asparagus, but I’m not a huge asparagus fan, unless it’s drenched in Hollandaise sauce.  I did have some chicken sausage and frozen broccoli though.  So, I decided to follow her technique while changing the ingredients a bit.

I used chicken sausage instead of bacon, kept the mushrooms, added red bell pepper (as I had part of a pepper leftover from something else and had to use it up).  Then, I changed the cheese to Manchego instead of parmesan, because that’s also what I had on hand.

Tip:
When your chunk of parmesan, Manchego, or other hard cheese gets hard to grate with a box grater, use a microplane instead.  You can also save the rinds (or even buy them at the market) and use them for soup. Just put them in a plastic bag in the fridge. They’ll keep indefinitely.

Back to the recipe, you essentially, cook the sausage (or bacon), add the veggies, then the pasta, some chicken broth, and top it all with grated cheese.

Sweet and Sour Turkey Meatballs

This recipe for sweet and sour turkey meatballs with jelly and chili sauce is comfort food that’s grown up and gone to the big city.

When I was a kid, my grandma used to make those classic grape jelly meatballs. Kind of sweet, but comforting and simple. As my tastes have gotten more sophisticated, I wanted something with more complex and “grownup” flavor: not quite as sweet, a little more sour, and with a bit of a spicy kick.

I replaced the grape jelly with no sugar strawberry jam (it’s sweetened only with juice, there’s no sugar or artificial sweetener), then added chili sauce, a bit of Tabasco and apple juice and got sweet and sour turkey meatballs.

My parents were visiting one day, and decided to stay for dinner. I had ground turkey and the rest of the ingredients in the fridge. I whipped up a batch of these, and I swear you’d think they’d never eaten before. Dad was sopping up the sauce with bread. Heck, he practically licked the plate! Maybe I should have called these “lick the plate clean sweet and sour meatballs.”

You make this recipe in two stages, first the meatballs, and then the sauce.  Put the meatballs in the oven for a few minutes to keep them from falling apart when you add them to the sauce.



Sweet and Sour Turkey Meatballs with Jelly and Chili Sauce Substitutions and Variations

  • Use beef instead of turkey
  • Replace the oatmeal with breadcrumbs
  • Try cranberry juice instead of apple cider (it will be a bit more tart)
  • Experiment with different jam flavors: strawberry, raspberry, four-fruit, sour cherry (you could even go back to good old grape)

Chili Garlic Chicken Thigh Recipe for One

I love Buffalo chicken wings, but wings are getting increasingly expensive.  The supermarket had a great sale on chicken thighs and legs so I decided to experiment and make a chili garlic chicken thigh recipe instead.

In addition to substituting thighs for wings, I gave the recipe a bit of a twist by replacing hot sauce with chili garlic sauce and making chili garlic chicken thighs.

The great thing about this recipe is that it’s pretty easy, and you don’t have to fuss with it.  You get great flavor without a lot of ingredients, no chopping, and very little mixing.

Using the chili garlic sauce is best, but if you don’t have it I’ve listed substitutions below.

Also, sharp-eyed readers may notice I’ve changed the instructions. The results are better if you bake the chicken at a higher temperature, make the sauce, and then slather it over the chicken once it’s cooked. Not to mention, this way is faster.




I served it with microwaved broccoli (cooked for two minutes and seasoned with lemon pepper) and fried potato wedges (parboiled, then fried in a pan like home fries).

Chili Garlic Chicken Thigh Substitutions and Variations

  • Use sriracha.  If you do, I would reduce or eliminate the apple cider vinegar, since the sriracha already has vinegar and sugar, and add some minced garlic.
  • Try it with chili paste, add garlic, and cider vinegar.
  • If you don’t have either of those, use hot sauce, the cider vinegar, and garlic.

I love this stuff. I put it on chicken, add it to hamburgers, or mix some with scrambled eggs. Basically, use it to add extra kick (and a hit of garlic) wherever you’d usually use Tabasco, sriracha, or ketchup.

If you prefer a bit of sweetness with your heat, use the sriracha instead of the chili garlic sauce. It’s also more spreadable than the garlic sauce (the consistency is closer to thin ketchup, while the garlic sauce is more like salsa).

I used a spicy chicken sausage here, but you could use andouille sausage or hot Italian sausage if you prefer.  Just cook it a bit more, and eliminate (or reduce) the first tablespoon of oil.

Pistachio Pesto Pasta

This pistachio pesto pasta recipe is a bit different from standard pesto recipes. The usual approach to pesto is to use basil and pine nuts.  A great combination, but it’s tough to use up a whole bunch of basil when cooking for one.  Either you have to make a big batch of pesto and freeze it, or it spoils.

I do have a basil plant, but cutting enough off to make pesto would leave me without much of a plant! This is a good compromise.

Plus, pine nuts have gotten awfully expensive.  It does have some basil, but I replaced most of it with broccoli. Then I substituted pistachios for walnuts or pine nuts.

Actually, to be entirely truthful, I ‘stole’ this idea from one of Robert Parker’s Spenser novels. Shhh, don’t tell anyone. He seemed to like food as much as he enjoyed mysteries and books (my kind of author).

You get the sweet, summery taste of basil, the earthiness of  broccoli, and the crunchiness of the pistachios (use the unsalted kind).  You can use walnuts too, if you prefer.

Not to mention, the broccoli keeps better than basil. And, if you want, you can buy it frozen. That also means less prep time, and less cooking time.

It’s also quick and easy to make (which is always a plus).

  • Use spinach in the pesto instead of broccoli
  • Skip the greens entirely and make a walnut pesto with walnuts, olive oil, parsley, parmesan, salt, and pepper
  • If you like your pesto spicier, add some chiles

Easy Chicken Curry Recipe

This easy chicken curry recipe is a quick and delicious way to get the taste of Indian food without a lot of work.  The original recipe came from The New York Times (I think), but I had to put my own spin on it. It only requires a few ingredients and a small skillet and you can put the whole thing together in fifteen minutes. Just perfect when you’re hungry and in a hurry!

If you don’t have Greek yogurt, you can use sour cream instead. As a bonus, sour cream is more heat-resistant than yogurt so you can add it directly to the pan, rather than dirtying a separate bowl. I use the yogurt because I prefer the flavor. Also, it seems more authentic to use yogurt instead of sour cream.

Garam masala is a spice mixture (kind of like curry, every mixture and every manufacturer is a bit different).  It adds warmth and savor to the dish (not spiciness).




Chicken Curry Recipe Variations and Substitutions:

  • If you don’t have jalapeño pepper, add a pinch of red pepper flakes along with the curry
  • Add some ginger
  • If you don’t have boneless chicken, cut up a bone-in thigh, or just start the chicken first, cook it for ten minutes, then add the onions, and follow the rest of the recipe (with the bone-in thighs, the recipe will take about 25 minutes total).

I love Indian food, but I used to find it a bit intimidating, because it’s not as familiar to me as a home cook. However, this cookbook made that a lot easier (and I use it quite a bit).

My favorites are quick chicken korma, lamb with spinach, fish fillets in curry sauce, and curried tuna (the canned kind, not fresh). Most of the recipes take less than 30 minutes to prepare.

Eggplant Parmesan Recipe for One

I have loved eggplant parmigiana (or eggplant parmesan, if you prefer) since I was a child. Back then, it was a special treat when we went to the dentist. Yes, the dentist!

There was a restaurant near my dentist’s office called Pippo’s (which is now, sadly, gone), that made the best eggplant parmigiana I have ever tasted. Mom tried her best to get the recipe, but without much luck. Drat!

Still, it was an incentive to have good checkups, so we could go out to lunch afterward! I’m sure we were the only kids in the neighborhood who looked forward to going to the dentist!

The restaurant, naturally, made it in huge batches, but this eggplant parmesan recipe is perfectly sized for one person. It’s quick, easy, and delicious. You can put the whole thing together in about thirty minutes.

I did “cheat” and use sauce in a jar, rather than making my own, but so what.  I do often make my own, but I didn’t have any handy, and I don’t feel the least bit guilty either.

When picking out your eggplant at the store, choose a light one (in weight, not color). The heavier ones have more seeds and are more likely to be bitter.

I know there is controversy about whether or not to salt the eggplant first. Some say it’s a must, to draw out the bitterness, and to cut down on the oil (eggplant does love to soak up oil). Others say don’t bother. I didn’t bother. One reason being that it takes time (and I was hungry), another being that I prefer less salt anyway.

Either way, just slice the eggplant very thin, dip it in egg, then flour (I used rice flour, but you can use the regular kind), and fry the slices in olive oil.

Top those with your favorite spaghetti sauce (I used a Robert Rothschild sauce, which was so thick I had to dilute it with some tomato sauce; Silver Palette sauces are good too), some fresh mozzarella, and pop it in the toaster oven to bake until the cheese melts. I had some tiny fresh mozzarella “pearls” so I used those. Fresh mozzarella slices are fine too.

Since it’s an eggplant parmesan for one recipe, you don’t have to heat up the whole oven (and the whole kitchen).

I served it with some fresh basil on top and a simple green leaf salad tossed with balsamic vinaigrette.

This single serving of pan-fried tilapia with lemon butter sauce is quick, easy, and delicious. I was never a big fish fan growing up, but I’ve grown to like it as I have gotten older.  If you’re a bit wary of fish, tilapia is a good “starter fish.” It has a mild flavor and doesn’t overwhelm your taste buds (or your kitchen).

I got the idea from someone who said she made tilapia with butter, lemon, and rosemary.  I thought that sounded good, but that it would be even better with some olive oil and mustard powder (it was).

You can put the whole thing together and have dinner on the table in less than fifteen minutes. Make the fish, steam (or zap) some veggies and you’re good to go.

I made this recently (just as spring is finally showing signs of arriving, after a truly nasty winter), but it would be great in the summer when you want something fast.  There’s no need to heat the stove or the oven for an hour.

By the way, the fish came from Trader Joe’s.  They have great frozen fish. The tilapia was in a package with individually-wrapped fillets. Normally, I don’t like extra packaging, but in this case it was perfect, since I only had to defrost one fillet, instead of the entire bag.

  • If you don’t have tilapia, use another mild, white fish such as cod, flounder, or Dover sole
  • Swap the rosemary for some capers
  • Skip the mustard and the rosemary and use dill instead
